Ingredients
- 1 (20-ounce) can crushed pineapple, undrained
- 1 (3-ounce) package strawberry gelatin powder
- 1 (8-ounce) container whipped topping, thawed
- 2 cups mini marshmallows
- 1 cup sweetened shredded coconut
- 1 (10-ounce) jar maraschino cherries, drained and halved
- 1 cup mandarin oranges, drained
- 1/2 cup chopped pecans or walnuts (optional)
Instructions
1. Dissolve the Gelatin
In a large mixing bowl, combine the crushed pineapple (with its juice) and the strawberry gelatin powder. Stir until the gelatin is fully dissolved.
2. Add the Fluffy Ingredients
Fold in the whipped topping until the mixture is smooth and evenly pink.
3. Mix in the Fruit
Gently stir in the mini marshmallows, coconut, cherries, mandarin oranges, and nuts, if using.
4. Chill
Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld and the marshmallows to soften.
5. Serve
Give the salad a gentle stir before serving. Garnish with additional cherries, coconut, or marshmallows if desired.
